Luscious Crostini with Goat Cheese & Onion Marmalade

  • Crostini Ingredients
  • 8 (oz) fresh Goat Cheese
  • Onion Marmalade
  • 1 posy of Arugula
  • Fresh ground pepper & Salt
  • Onion Marmalade Ingredients
  • 4 tablespoon unsalted Butter
  • 4 Sweet onions, if possible (Vidalia onions)
  • 1/3 cup honey
  • 1/3 cup red wine vinegar
  • 1 ½ cup red wine (Pinot nor or Chianti)
  • 2 twigs fresh rosemary (elective)
  • Salt & Pepper according to taste

Step 1

First of all preheat the oven to 350F.

Begin with peeling the onions, cleaving them and then cutting into thin slices about a ¼ inch. Never make the slice too bony, as the onions will substantially reduce.

Step3

Take a Saucepan liquefies the butter into pan, over the medium heat. When the butter starts to spume, add some onions and blend to coat. Cook it for 10 minutes or until the onions have softened and caramelized. Add some rosemary, red wine and pinch of salt of pepper into the pan and cook it until the wine has reduced absolutely over the low heat.

Step 4

Meanwhile the onion combination reduces, heat the honey into another small pan over medium heat, until it change into a soft caramel color, a propos 2 minutes. Add some red wine vinegar and simmer on low for 2 minutes and then remove it from heat.

Step 5

When the onion/red wine mixture has absolutely reduced, add some vinegar/honey combination into it and blend to combine. Cook it for 10-15 minutes or until the combination becomes a marmalade like consistency. Remove the large pieces of rosemary (if any). Set aside the dish and allow it to chill.

Step 6

To congregate Crostini, make a slice 1 inch round out of a baguette. Assemble these slices on a rack in oven and bake until toasted for 5 minutes approximately. Remove the bread from oven and slather with fresh goat cheese, garnish with onion marmalade and top with some sprigs of arugula leaves.
