Luscious Crostini with Goat Cheese & Onion Marmalade

- Crostini Ingredients
- 8 (oz) fresh Goat Cheese
- Onion Marmalade
- 1 posy of Arugula
- Fresh ground pepper & Salt
- Onion Marmalade Ingredients
- 4 tablespoon unsalted Butter
- 4 Sweet onions, if possible (Vidalia onions)
- 1/3 cup honey
- 1/3 cup red wine vinegar
- 1 ½ cup red wine (Pinot nor or Chianti)
- 2 twigs fresh rosemary (elective)
- Salt & Pepper according to taste
First of all preheat the oven to 350F.
Begin with peeling the onions, cleaving them and then cutting into thin slices about a ¼ inch. Never make the slice too bony, as the onions will substantially reduce.
Take a Saucepan liquefies the butter into pan, over the medium heat. When the butter starts to spume, add some onions and blend to coat. Cook it for 10 minutes or until the onions have softened and caramelized. Add some rosemary, red wine and pinch of salt of pepper into the pan and cook it until the wine has reduced absolutely over the low heat.
